I think you're overrating it a bit. The ending for last week's episode was really good, that's true, but from the moment that bullet dropped you knew what was going to happen so they kindof killed the suspense right there.
This show has been great so far though, i'm amazed the writers managed to keep the quality up specially since the main plot of the show was resolved in the first two seasons.
Sometimes exaggeration is used in discussion to convey enthusiasm. If I had said "the last five minutes is the best thing since the invention of sex." would you have taken that literally too?
As for the bullet thing, the show is not all thrilling drama. It's also black comedy. And inherent in black comedy is irony. Sometimes the littlest most innocuous things can end up having a huge impact. The bullet dropping might have killed the suspense a bit, but it added a note about the capricious nature of fate... and besides, with this show, you're never
sure what appears is about to happen will actually happen.
