soy is one of the most processed foods known to man.

isnt the idea of organic foods to be natural and unprocessed by chemicals?

That's soybean oil. Pretty much all vegetable oils besides olive oil are heavily processed in the same manner.

defatted means post solvent processing.

one article i read said soybean oil is whats used in further processing to get the rest of the common soy products.
so after its treated with solvent and turned into oil, the oil is then shipped off to be reprocessed into more deliciously artificial crap.
