What does Israel defending herself have to do with Israel constructing settlements in continued violation of agreements and UN mandates?

Agreements between who and who? Between the Israelis and the Palestinians? Those were all voided as soon as the Palestinians sent their next barrage of rockets at Israel. You can't selectively try to hold Israel to them when the Palestinians treat them like toilet paper.

Israel has way over played the 'anti-Israel' card. Whenever I see that, I read 'anti-Jewish'.

No it didn't. Israel existed thousands of years before the UN. It may exist thousands of years after the UN is gone.
It's existence does not depend on the UN.

There was a nation called Israel 2000 years ago. It is not the same Israel that exists today, and it should not be treated as such.
Israel is a modern creation, and that is how it should be treated.
