I never understood why they decided to take the story more and more away from the interesting ambassadors (londo, g'kar, kosh to some extent) and focus it more and more on the boring ones (delenn, sheridan).

I think the reason you find those 2-3 interesting is the story went away from them before they ran out of material and they got boring.

Maybe. They had more personality, though. Delenn and Sheridan are both cardboard cutouts.
