Technically the game shouldnt let you with regard to alchemy plant parts -- it probably does though.

OK, I made a Wood Elf.

This guy is much m0ore powerful than my Nord warrior. I plinked the big frist spider without and potions, I plinked the Ice Troll but did drink 3 potions. My Nord guy died a lot to the spider even with potions before I got lucky and never could kill the Ice Troll alone as such a low level.
It's interesting to that I pick ingredients everywhere I go. Learning the mechanics of the game really helps.

A stranger walks into a bar. He gets a few quests to load the dishwasher and empty some trash cans, before he gets the monumental task of throwing out a rowdy drunk. Then the rest of the employees ask him to take over as bar manager and they start paying him a cut out of the cash register. But he still gets quests to take out the trash and empty the dishwasher.

sigh, so many of those tasks ingame are about as tedious as taking out the trash.

How the hell did you die to that spider?
I'm playing a Dunmer my first time through, I just waltzed in the room and blasted him with fire, then backed out into the hallway where he couldn't get in because the doorway was too small...popped back in when he ran back over to the webbed guy, nuked him more, rinse and repeat until I was out of magicka, then wandered in and finished him off with the sword. I don't think I even got below 3/4 health.

Ok let's say you're dead-set on capping alchemy. You have two ways to go about this. You can...
A) Buy and harvest every ingredient you see, make potions, do a lot of fast traveling around to buy/sell as needed, spending a few days at it.
B) Buy a few fortify alchemy items, drink a Fortify Restoration potion, remove items, exit the item menu, go back to item menu and wear them again. Make another - this time more powerful fortify restoration potion. Drink that, and repeat. In less than 5 minutes, you'll be at max alchemy because you'll make a potion worth over a million gold. Sell it to the merchant and you'll instantly have 100 speechcraft.
Which do you do?
