2 cooks and dishwasher called off. tried calling in replacements nobody answered their phones.
so me one other cook and the kitchen manager, opened the store to a $3000 lunch and $4500 worth of caters. 1 cater was scheduled ahead of time so we where prepped for that, the other 2 where last minute caters, we are supposed to have 24 hour notice for caters above 10 people.
the wait staff was bitching about serve times, they where pissed because they work off tips and well crappy serve times equals no tips. we had customers walking out because of wait times.
2 hours after my scheduled shift ended I finally leave.

time for Kitchen Nightmares.
did you step up your game at all or do what you normally would fully staffed?
tanking to teach management a lesson doesn't always work out when you pissed off the customers in a service industry.

we didnt tank on purpose, we are running one cook short and with 2 call-offs plus the dishwasher called off too, there was nothing we could do.

I used to love days like that. It's when you find out who has the chops....and who is lacking.
When the entire place is pandemonium scented with flop sweat, the fear and despair is rising to the ceiling like a black cloud....you just put your head down and crank those orders out, never flinching, never bitching, just producing.
I'd feel so good after a day like that I'd have to beat off before and after I nailed the wife in the living room.
