
3 1/2 cups chicken broth
1/2 cup chopped onion
2 cups of beer (I used Lost Coast Stout)
1 1/2 teaspoons of dried thyme
4 cloves of minced garlic (I used 6... I like garlic)
2 cups milk
3 cups Sharp Cheddar Cheese, Shredded
3 Cups American Cheese, Shredded
1 Teaspopon paprika
Add: Chicken broth, onion, beer, thyme and garlic to crockpot. Slow cook on low for 4 hours.
Add: Milk, cheeses and paprika. Cook on high for 45-60 minutes, or until heated through.
Garnish with croutons. (I made homemade rye croutons, just cut up pre-sliced bread into chunks and baked for 12 minutes at 425, stirring once).
It turned out pretty much delicious, the bf and I enjoyed it the night I made it, and my co-workers enjoyed the rest of it the next day. Most said it tasted like a French Onion Soup with a twist.
