Easy Summer Appetizer |
Summer Squash Carpaccio
Thinly slice (razor thin) zuchinni and yellow squash and overlap on plate
Top with parmesan cheese, drizzled olive oil, basil ribbons and pine nuts
Serve cold

I would think you would have to, lol. Even at "razor thin", layering it still won't amount to much unless you use about 40 of each.
Sounds good though. I may try using a thicker cut and baking for just a short bit.

It's an appetizer so no layering and no cooking the squash. Now for a meal you might want to cut the squash thicker but think of this dish like beef carpaccio. The meat is razor thin and you don't have a huge amount on your plate. You can either toast or not toast the pine nuts depending on taste.

ahhhh, ok, in that context it makes much more sense, lol. With summer upon us and the hot temps, that does sound like a nice cool appetizer. When I think summer and veggies I always think of cucumber as that always has a clean, crisp, cool taste to it.
I wonder if adding that into the recipe would throw it off any?

probably would be very good; try it - if you like it great, if not find another use for the cucumber or use all cucumber instead of squash
