I LOVE my crockpot, especially during TBall/soccer season when I'm toting my kids all over the place lol.

Our favorite:

2lbs lean beef (or can use the prepackaged stew meat)

Large can of tomato sauce

Potatoes

Celery

Parsley

Carrot

Small Onion (I prefer the yellow ones)

Peas....you get the drift.

Seasonings:

Celery Salt

Garlic

Dash of Tabasco

Pepper

I sear the meat, and then put water in the pan after i've put the meat in the crock. Then I'll boil the water for a few mins, and dump that in the crock too! lol. I make a big pot of this and freeze the leftovers. I also make spaghetti sauce and homemade chili in the crockpot too

I'm lookin for some new recipes, I know I can always search the interweb or bookstores, but imo the best recipies normally come from other chefs/cooks

This is one that I got from my girlfriend and it's ALWAYS a hit!

Kim's Roast Tacos

1 roast ( you can use pork also)

salt and pepper

1 small onion finely chopped

Put roast, salt and pepper and onion in crockpot and cook on low for 8 hours.

At the 8 hr mark, get 2 forks and shred meat apart. Pour in 1 large can of red enchilada sauce. If you buy a large roast, get the BIG can of sauce, if it's 4lbs or smaller, get the small can.

Mix the meat and sauce together.

Cook for 2 more hours on low.

While it's cooking, prep the following toppings:

chop up some cilantro

shredded mozzarella cheese

chopped white onions

You can serve in corn or flour tortillas. I usually nuke mine in the microwave for 60 seconds per 6 tortillas to get them soft. Place them in a ziplock bag before nuking.

Pile meat in a tortilla and top with the cilantro, cheese and onions.

If you like some heat, pour a lil hot sauce on it, and wah-la

My mom's baby back crock ribs.

Baby back ribs

2-3 lemons sliced

1-2 onions sliced

1 can beer

1 bottle of bbq sauce

salt and pepper to taste

Salt and pepper the ribs. Broil for 7 mins or so on the meaty side and 5 or so on the bone side. This is mainly to brown them and drain some of the fat. Cut into indvidual ribs.

Layer the ribs with lemon and onion slices ending with onion and lemons. Mix bbq sauce and beer in a 1:1 ratio and pour over the ribs. Cook on low overnight until the meat falls off the ribs.

I used to use my crock pot pretty often, but all of the stuff I used to make is either beef or pork, neither of which my girlfriend eats...

Does anyone have any suggestions? I tried a chicken recipe once, with chicken breasts, but it came out rather dry... I didn't really like it.
