	I want to substitute 1/4 cup of wine with 1/4 cup of JD in a braise. One thing the wine does is provide acid though. 	To answer your question, most alcohol beverages will have the same acidity levels - high. -Foxy- posted: if it does, that would be some bad jd jd shoudl be smoooth, not biting acidic I don't know if it's worse that you think JD isn't acidic or that you think it is a smooth(as apparently this is a measure of acidity? ) whiskey. -----signature----- Drink life as it comes.
