I use 1lb each chips, cheese, and beef.
The I usually make a marinade for the beef (ground round, you will get enough grease from the cheese) with about half a cup of BBQ sauce (I use Montgomery Inn's), 1/2 a package of taco seasoning, a tablespoon of crushed red peppers, a couple of turns of black pepper, a small amount of minced onion, and a few drops of a very hot sauce (Reaper's Reserve is my favorite, followed by Slap me on the Ass and call me Sally). I mix the marinade well, and work it into the beef. yes, it's messy.
Then I take a large platter, alternate 2 layers each chips (the scoops chips are great here) and cheese (I prefer colby-jack). Save just a small hand full of the cheese. Set Aside.
I brown the beef in a large frying pan, when it's almost browned I melt the cheese over the chips. (over or microwave). strain the beef, then spread over the top of the chips/cheese, then put the remaining cheese over the top of the beef. Spread a small container of sour cream across the top of the beef, and then put a healthy amount of chives and diced tomato over the sour cream (make for nice presentation).
If you get it just right, they have a spicy-sweet flavor but don't cause any burn.
