This is another HellinHiHeels recipe that I tried recently and it is VERY tasty. My husband put the ingredients into his diet software and it comes out to about 350 calories per serving. Thanks again to HnHH.


Bruschetta Chicken Bake

when I saw the recipe in one of my favourite magazines for this I had to try it:


1 can (19 fl oz.) diced tomatoes, undrained (I used the one with Italian herbs and spices added)

1 pkg (120g) Stove Top Stuffing Mix for chicken

2 cloves garlic, minced

1-1/2 lbs boneless, skinless chicken breasts, cut into bite-size pieces (I used what chicken parts I had)

1 tsp dried basil leaves

1 c Mozzarella cheese, shredded


and I added:

1/2 med. sweet onion, finely chopped

2 stalks of celery, finely sliced (that I had left in the fridge to use up)

remaining 1/2 of a sweet red pepper, diced (again left over in the fridge waiting to be used in something)

pinches of salt and pepper


the directions state to layer the chicken raw and bake for 30 min or until chicken is cooked through .. but I tend to prefer cooking the chicken first and adding so ...


my way:

-Mix together tomatoes, stuffing mix, basil, a pinch each of salt and pepper just until stuffing mix is moistened. Set aside.

-To a large hot skillet add 1 tbsp oil .. sautee garlic, onions, celery and red pepper. Add a pinch of salt and pepper. Add bite-size chicken pieces and continue to saute until chicken is cooked through. (if you find cutting up cooked chicken easier then simply cook the chicken pieces first then cut up to bite-sized pieces)

-Preheat oven to 350F. In a 13x9" baking dish layer chicken sautee, stuffing, and cheese. Bake for 20 min. Serve hot.

I make this all the time. It's on the back of the Stove Top box. I usually add a little parmesan, onion and zucchini.
