What is so cool about this recipe is that it uses the instant flavored oatmeal packets. I love the Quaker Oats Bakery Favorites. The flavors they have are Banana Bread, Apple Crisp, and Cinnamon Roll.



Also, I like to make these in a mini-loaf pan.



(These are really good to make individual meatloaves too! Everyone gets their own and they cook quicker too!)







Oatmeal Bread




4 packets instant flavored oatmeal

1 cup milk

1 cup flour

1/3 cup sugar

3 tsp baking powder

1/2 tsp salt

1 well beaten egg

1/4 cup oil


Soak oats in the milk for 15 minutes.

Combine dry ingredients.

After 15 minutes, add egg and oil to the oats and milk then mix with dry ingredients just until moist.

Bake at 425, 20-25 minutes when toothpick comes out clean.


Makes 1 loaf or 4 mini-loaves.


Another thing I love to do is add my own little touches. To my Banana (Oatmeal) bread I will mash up about 3/4 of a well-ripened banana and add to it. I've put raisins in a maple/brown sugar one. The apple crisp one is really good with finely cubed dried apples added too.

I did notice that you really have to watch it when you hit the 20 minute mark. The top shouldn't be too brown because then it will be overdone and rubbery. If the top is slightly brown and the toothpick comes out clean, it's done. The first time I made this I overcooked it because I was used to other breads (banana, etc.) being more brown on top.
