i tryed this the other day ... was pretty good


chop up any leftover baked potatoes
put them in a pan with a little bit of butter
stick it in the oven at 350 until it gets hot

take it out -- cover it in cheese -- green onions -- bacon - more cheese

stick it back in the oven until the cheese melts

beat 4-5 eggs --- pour it over the potatoes/cheese/etc... stick it back in the oven - take it off "bake" put it on "broil" --- cook it until the top starts to brown

mmmmmm baked potato/egg/bacon/cheese casserole

I always make extra baked potatoes as I like to fry them up for breakfast. I chop them up toss some butter in a pan sizzle a bit of onion until it just gets clear looking then add the potatoes. When the potatoes are brown I toss a handful of grated cheese over the top. Your way is just about the same thing I will have to try your method!

I do much the same as Ayla but forget the cheese and add salt, pepper, garlic and oregano instead to make Greek potatoes. I also use olive oil instead of butter for the skillet.

My mother-in-law does this, they call it fried potato hash, and OMG..its soooooooo good.
