2 garlic cloves – minced
2 tbsp Dijon mustard
2 tbsp whole grain mustard
¾ tbsp fresh rosemary – finely chopped
¾ tsp fresh thyme – finely chopped
1 tbsp dry white wine
1 tbsp olive oil
Non stick cooking spray
6 (6/8 oz) salmon filets
Salt/Pepper for seasoning
6 lemon wedges
In a small bowl – mix garlic, both mustards, rosemary, thyme. Mix in the wine and oil. Set aside. Preheat boiler – line a heavy rimmed baking sheet w/ foil and spray the foil with nonstick spray. Arrange the salmon filets and sprinkle w/ salt and pepper. Broil for 2 minutes. Spoon mustard sauce over the filets. Continue to broil until filets are just cooked through and golden brown – 5 minutes longer. Transfer to plate and serve with lemon wedge.
