1/4 cup lemon juice
1/4 cup sweet white wine
1/4 stick of butter (melted)
1 bunch of celery
salt
black pepper
parsley
thyme
garlic powder
1 med. onion (sliced onion ring style)
(i like to add creole seasoning for a little kick)
just barely melt the butter, roll the fish in the melted butter
crust the outside of the fish with parsley, thyme, garlic powder, black pepper, salt (and creole seasoning if you like)
lay down the stalks of celery in the bottom of a baking pan (keeps the fish from getting soggy) - set the fish on top of the celery
pour the wine and lemon juice over the top of the fish (slowly so it doesn't wash off too much of the crust)
spread the onions out over the top of the fish
back at 400 for 30-45 minutes (i like to bake it at 350 for 30 minutes and then put the oven on broil until the onions just start turning black)
