let me start out by saying that i am in great shape. i exercise daily, only drink water/juice, and watch what i eat in general. i do not eat a lot of sugar, but still have a soft spot for desserts. that being said, i really enjoy cake. just about any kind will do, although i tend to stay away from the ones loaded with too many layers of frosting, nuts, etc. my all time favorite cake is the one below. its basically a yellow cake, with 2 layers of some sort of light chocolate flavored whipped frosting, with a normal chocolate frosting on the outside. if anyone could give me hints on how to achieve making this, or even has a recipe that would work, i would love you forever!

Give it time. Recipes for baking aren't usually recalled right off the top of your head.

try this .... it is pure awesome full of moistness


Ingredients:

* 2 cups flour
* 1/2 cup cocoa
* 1 1/2 teaspoons baking soda
* 1/4 teaspoon salt
* 1 cup sugar
* 3/4 cup mayonnaise
* 1 cup water
* 1 teaspoon vanilla

Preparation:
Sift together the flour, cocoa, soda and salt. Cream together the sugar, mayonnaise, water and vanilla. Add dry ingredients to the creamed mixture; stir until well blended. Pour batter into greased and floured layer cake pans (or a 9- x 13-inch pan). Bake at 350°F. for about 25 minutes.

Personally I would go for a Pound Cake


Put some Strawberries on it and you have some good stuff.

1 3/4 cups (230 grams) cake flour, sifted

2 teaspoons baking powder

1/8 teaspoon salt

1 cup (226 grams) (2 sticks) unsalted butter, room temperature

1 cup (200 grams) superfine or castor sugar

4 large eggs, room temperature

2 teaspoons pure vanilla extract

Zest of a lemon or orange (optional)

Note: To make your own superfine sugar - place 1 cup (200 grams) granulated white sugar in the bowl of your food processor. Process until very fine, about 30 seconds.

Directions:

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Butter or spray with a pan spray, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Line the bottom of the pan with parchment paper and butter or spray the paper.

In a large bowl, sift together twice, the flour, baking powder, and salt.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until creamy and smooth. Gradually add the sugar, beating continuously on medium-high speed until light and fluffy (this will take about 5 minutes). Scrape down the sides of the bowl as needed. After about five minutes the batter should be light in color and fluffy in texture. Then add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed. You will notice that the batter will look curdled. Don't worry as the batter will come together again after you add the flour mixture. Add the vanilla and lemon zest, if using, and beat until incorporated.

Add the flour mixture and mix just until incorporated. Pour the batter into the prepared pan and smooth the top.

Bake for about 50 to 60 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.

Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. Remove the cake from the pan and cool completely. Serve warm or at room temperature

Will keep several days well wrapped or it can be frozen for a month.

Makes one 9 x 5 x 3 inch loaf.

Personally I like to have lemon and orange zest in it. Gives it a real nice flavor.

I have never tried this, but I just remembered it.


1 container of cool whip (or you can whip your own cream) and 1 box of instant chocolate jellow pudding


It makes a great dip for fruit, but I bet it would make something similar to the whipped cream icing in the middle of those layered cakes.

I dont make too many cakes from scratch. Normally I use Duncan Hines cake mixes. Try the Butter Golden Recipe mix. It has to be the one with "butter" in the title. It's delicious. I havent found a chocolate frosting recipe that I absolutely love yet though.
