2 bunches of scallions
2 tbsp paprika
1 ½ tbsp garlic powder
1 ½ tsp allspice
1 tsp nutmeg
¾ tsp cayenne pepper
1 tsp kosher salt
¼ tsp black pepper
1 ½ tbsp olive oil
Juice of ½ lime
2 tbsp molasses
4 lb chicken – cut into pieces
8.5 oz cornbread muffin mix
1 jar jalapeno – mild + seeded + minced
Lime to garnish
Heat oven to 400. Slice green tips of 4 scallions. Set aside. Place rest of scallions in a roasting pan. In a small bowl – combine paprika + garlic powder + allspice + nutmeg + cayenne pepper + salt + pepper + oil + lime juice + molasses. Spread mixture over and under chicken skin. Place chicken on top of scallions in roasting pan – roast 45 minutes or so - until done. Prepare cornbread mixture – stir in jalapeno peppers + reserved scallions. Place in 8 inch greased pan – bake 15-20 minutes Serve chicken – muffin – and lime wedge.
