My sister in law just sent me a note about a recipe she got. I haven't tried it yet but I'll have to soon. I don't normally cook meat in the microwave either.

A friend of mine gave me a recipe yesterday that I was a little skeptical about making. You take a whole chicken and make a rub out of smoked paprika, garlic powder, salt, pepper, and thyme. Rub olive oil on the bird after you rinsed and dried it then put the rub on it. Put it in a casserole, do not cover it and believe it or not put in the microwave for 25 minutes till the internal temp is 165. It was fabulous, couldn't believe it cause I never cook meat in the microwave. It was so juicy and wonderful. I also put carrots in the casserole and they had great flavor from the rub and olive oil. It was a pampered chef recipe she got at a party. You can also put potatoes and onions in the pan as well but I didn't have any last night.

If you have a big enough microwave, I have a great recipe for microwave lasagne. I'm not kidding, either. It's great.

I will try to remember to look it up when I get home. I got it out of a magazine years ago.

Microwave Lasagna


9 uncooked lasagna noodles

15 oz. ricotta cheese

8 oz. (2 cups) shredded mozzarella cheese

4 oz. (1 cup) shredded parmesan cheese

4.5 cups tomato sauce (meat optional)


Spread 1 cup sauce over bottom of a 12x8x2 baking dish. Top with three noodles in a single layer, then top with 1 cup ricotta, 2/3 cup mozzarella, 1/3 cup parmesan, and 1 1/2 cups sauce. Repeat with a second layer of noodles, cheeses, and sauce. Top with remaining noodles, then sauce and remaining mozzarella and parmesan cheese. Cover tightly with ventilated plastic wrap (might be better to have a microwave-safe lid, this recipe is old). Microwave on high 6 to 8 minutes. Reduce power to medium for 30 to 32 minutes. Let stand, covered, for 5 to 10 minutes. Makes 8 servings.


My microwave is too small to cook this in now, but I substitute no-cook noodles for uncooked noodles and bake it in the oven at 350 until it's bubbly. I also used reduced fat ricotta and mozzarella cheese. If your sauce is good, the lasagna will be, too.

Interesting thread. I hope it keeps rolling with other good nuked food that you wouldn't normally think of.

My wife does scrambled eggs and it's pretty good.
