I can't find my thyme |
I'm making red beans and rice and I can't find the thyme.
Then I couldn't find my bay leaves. I have this huge bottle of bay leaves, how could I loose them? 
So I substituted poultry seasoning, that should go just fine in Cajun style read beans.

Make some compound butter and put it in the fridge.
-Soften the butter
-Mix in desired herbs
-Wrap butter in plastic wrap in a tube shape
-Place in freezer
Compound butters are an excellent pre-prepared item to have handy. I use it mostly on steaks and pasta (just slice off a bit and let the heat of the food melt it. Right now I have thyme butter, garlic butter, and an Italian mix with basil, oregano, and parsley in my freezer. Just make sure you keep them wrapped tightly - after wrapping I put them in freezer bags - since fat likes to absorb flavors of other foods in the freezer.

Well, that'll work for 10% of it ... now for the other 90%.
It still amazes me how one little small plant exploded .... guess the month of rain had something to do with it.
The basil is keeping up with me - been making lots of pesto dishes - I can't get enough. The rest of the herbs tho, sheesh.
