I've never eaten a date, Kroger has some so I bought about 5 and they are wonderful. Almost too sweet.

Anybody have a good recipe using dates?

date nut pudding


"DATE-NUT PUDDING WITH CARAMEL SAUCE"


1 c. dates, cut up

1 c. boiling water

1 c. sugar

1-1/2 c. flour

1/2 c. chopped nuts

1 tsp. butter

1 tsp. vanilla

1 tsp. soda

1 egg

Pinch of salt


CARAMEL SAUCE:


1/2 c. cream

1/2 c. butter

2 c. brown sugar

Pinch of salt


Pour boiling water over dates and let cool. Add sugar, flour, nuts, butter, vanilla, soda, egg and salt to date mixture and blend well. Bake in a 9 x 13 inch greased and floured pan at 350 degrees for 30 to 45 minutes or until toothpick comes out clean. When cool break into pieces and fold in caramel sauce. Cook the caramel sauce until it candies. Cool before folding into date pudding; add sliced bananas and whipped cream when you are ready to serve. A Christmas favorite!

What type of nuts for that recipe?

I use pecans for many things, but I guess whatever kind of nut you like best.

My Grandma made a ginger cookie with them I have her recipe box I try to find it. I haven't had one in twenty years but she always made the best Christmas cookies.

I usually add dates to my banana-nut bread. They make it WONDERFUL.

I don't like dates, but I saw Ann Burell make this the other day and it seems like a nice savory use for them.

Bacon Wrapped Dates Stuffed with Manchego

Ingredients
15 Medjool pitted dates
1 pound aged Manchego, cut into 15 blocks
5 slices bacon, cut into thirds
1/2 cup maple syrup

Directions

Preheat the oven to 400 degrees F.

Make an incision on one side of each date and insert a block of Manchego. Squeeze the date shut in your hand to secure. Wrap each date with a bacon strip and secure with a toothpick. Place all the dates on a sheet tray lined with a silicone mat or parchment paper.

Roast the dates in the oven until the bacon on top is starting to crisp, 5 to 6 minutes. Turn the dates over and cook the other side until the bacon crisps.

Remove the dates from the oven and brush both sides with maple syrup. Return the dates to the oven until they are really crackly and sticky, 1 to 2 minutes. Serve hot.
