It's cured pigs jowl.
While almost everybody is going to like good Pancetta, this is going to be hit and miss, some people will not like it.
Lots more fat than pancetta too. Use it even more sparingly.

Since I saw Batali use it, I got some guanicali |
First thing I tried was I rendered the Guanicali until it was crispy bits then I took it out and cooked shrimp until almost done, took them out. Then I added 1 shallot sauteed until light brown, added some garlic, then I added about a cup of chicken stock. While it was boiling I scrapped up all the yum yums at the bottom.
When the stock reduced to a sort of thin syrupy texture I added the shrimp, guanciali bits, and a cup of cooked white rice. The rice soaked up everything, shrimp finished cooking. Finished with Tony Sacheries. It was very good but different. It had warm spice overtones with clove peaking out every now and then.
Not sure what I'll try next.
