But back to this "cake". It was the consistency of a quiche, definitely heavy on eggs. There wasn't any cheese that I could detect but before I give a go at trying to recreate it with just quiche and zucchini thrown in, I thought I would check to see if anyone here had a recipe for it?
I've only found fried zucchini cakes and baked zucchini breads when I've looked online, and this was not a bread consistency, nor cake. There was no discolouration either, just a pale yellow and tender but firm zucchini chunks.
I'd appreciate any input from anyone who has had or has a recipe for anything similar.
