Anyone have any good recipes for Vegetarian Lasagna?

I've never tried to make one but can I ask do you mean merely no meat or no animal bi-products as well? If it is the latter, good luck. I cannot imagine lasagne without cheese!

I've made eggplant lasagna without meat quite a few times and rather like it. Shred the eggplant then spread it out on a cooling rack and salt it so it to pull the moisture out. If you want to get rid of cheese also you can substitute tofu. It doesn't taste like much but it adds some of the texture that you would get from cheese.

always use broccoli and carrots in veggie lasagna

Try putting ground vegemeat in with it too, so you get some protein.

I also can not imagine lasagna without cheese, but then I'm not a vegan or even a pure "vegetarian." However, I once knew someone that would order pizzas and burritos without cheese...

I actually tried some kind of black bean patty and it turned out pretty good. It was actually a little spicer than usual and was really good. and yes I meant just no meat... yeah I gotta have some cheese on it.
