Going to let some onions, garlic, and red pepper flakes saute in a bit of vegetable oil. Then dropping some roasted tomatoes and tomato paste on top. Ends up being a sauce/soup kind of deal. Trying to think of some more ingredients to add to it in order to fill it out.
Suggestions?
Needs to be vegetarian.

Baby Eggplant
Carrots (shredded)
Serve over pasta with some freshly-grated parmesan and home-made garlic bread.
