I fry mine in oil till they're cooked, drain, pat dry then season and bake them for a while.

It's so much work and generally about the same cost as just ordering some from my pizza lace. I rarely bother.

Hot Wings

Combine the following in a large saucepan

16 oz. hot Picante sauce
5-6 oz. hot chunky salsa
1 Tablespoon chopped garlic
1/4 cup horseradish mustard
2/3 cup honey
1 teaspoon oregano
1 tablespoon dried chopped onion
2 tablespoons ginger
1 cup chopped jalapeno peppers
1/2 cup sherry wine
1 teaspoon crushed red pepper
1/3 cup corn syrup or molasses

Bring to a boil. Turn down heat and sprinkle and stir in cornstarch to thicken. Sprinkle slowly to avoid lumps. Let cool and pour over 3-4 pounds of cutup chicken wings in a plastic or glass bowl. Cover and let sit overnight in the refrigerator.

The next day, place wings and sauce in a rectangular cake pan and bake for one hour at 400 degrees Fahrenheit or until brown.

I just buy a bag of those frozen wings and pour in about 1/2 bottle of teriyaki let marinate a few hours then toss them marinade and all into a cake pan and cook at 400 for about 30 mins. I then pour off all the juices and put back in the oven for about 15 mins until that side is brown then I turn them over and crisp up the other side.

I have also made them this way:

par boil about 3 pounds of wings separated for about 20 mins in enough water to cover, crushed garlic the juice of one lemon, a sprig of rosemary. Drain well, then put them on a paper towel or kitchen towel and dry them off the best you can.

heat up deep fryer, fry as per your fryers directions. Drain keep warm but do not cover you want them to stay crispy

while frying your batches of wings mix up the following in a sauce pan:

1/4 cup of butter

about a 1/3 cup of your fav hot sauce

garlic powder a couple good shakes

Black pepper

onion powder again a few good shakes.

cook over med heat until butter is melted and everything is combined.

when all the wings are down pour the sauce into a bowl big enough to hold all the wings, add wings toss then remove.

I don't like my wings hot at all so I never use the peppers but they are spicy and that's what I like about them. I just posted the original recipe - I wish I could remember where I got it from...
