I don't stuff them I use my 16" fish poacher
4 6oz jars of sliced mushrooms
1 28oz can of diced tomatoes
1 28oz can of tomato sauce
4 sliced northern or sweet onions (your choice)
1 6 oz can of tomato paste
1/4 cup dry basil if you have fresh mince about a cup
Salt and pepper to taste
8 to 10 cloves of garlic minced
In the bottom of the poacher make a layer of sliced onions to place the loin on. Add the mushrooms to the top and sides. Pour in the diced tomatoes and sauce. Place the paste in a bowl with the spices and garlic with just enough water to make whisking it and the spices into a pourable liquid and add to the poacher. Top the poacher off with water so the liquid is about 1/4 to a 1/2 inch from the top rim of the poacher.
Bake covered in a 350 oven 45 minutes per pound of loin.
