I don't get it. Buttermilk biscuits rise better and come out more fluffy and breadlike than biscuits just using milk.

Here's my basic recipe.

2C flour
1/2t salt
1 stick cold butter
2T Crisco (cold)

Now, if I'm using 1C milk I add 5t baking powder.
If I'm using 1C buttermilk it's 1T baking powder and 1/4t baking soda.

It doesn't seem like that big of a difference but it sure has a big difference in results.

If you want the instructions:

Sift together dry ingredients, cut in the shortening, add the liquid, mix with a spoon until incorporated.
Pour dough out on a well floured counter and give it no more than 10 kneads, flatten into a 1/2 inch high circle,
cut into rounds using a biscuit cutter. Bake at 425 in a convection oven for 12 minutes, 15 in a regular oven.

I just made buttermilk bicuits for the first time this morning. I used Alton Brown's recipe. http://www.foodnetwork.com/recipes/alton-brown/southern-biscuits-recipe/index.html They were delicous...soft and flakey. Yum. I guess I am going to have to keep a supply of buttermilk around now.

Yep, it's got to be something different about buttermilk.

It's thicker and acidic. Soak chicken in it overnight for YUMMIE fried chicken.
