I live in Wisconsin and it's cranberry harvest time. I always end up with a lot of cranberries, more than I can use while they're still fresh. Yesterday a friend stopped by with more.


Anyone have some interesting and tried and true recipies using fresh cranberries (besides jellied, please)? Thanks!

the usual cranberry mixed w/ mayo for turkey sandwiches

cranberry muffins/bread

apple/cranberry pie (nice spicy juicy apple pie and toss in some cranberries in the mixing of apples and sugar and spices)

if you can make blueberry smoothies, how about cranberry ones?

Dry them and mix in salads or just eat as a snack.

I was thinking this sounded kind of tasty...

CRANBERRY DIJON CHICKEN

1 family pack any type chicken cuts (best with leg quarters)
1 can whole berry cranberry sauce
1 packet Lipton Onion Soup mix
1 bottle French dressing
2 tbsp Dijon mustard

Preheat oven to 350°F. Mix all ingredients except chicken in medium -large glass baking dish. Add chicken and spoon mixture over top of chicken making sure to cover completeley.

Bake uncovered for 35-60 minutes (depending on choice of chicken cuts - about 60 minutes for leg quarters) occasionally spoon-basting with mixture. Chicken is done when liquid runs clear or meat flakes with the twist of a fork.

Or this one...

CRANBERRY ORANGE CHICKEN

2 tbsp. butter
4 chicken breast halves with bone
2/3 c. fresh orange juice
2/3 c. fresh or frozen cranberries
1 tbsp. honey
2 tbsp. grated orange peel
2 tbsp. cornstarch
1/8 tsp. ground cloves

In a large frying pan, melt butter over medium heat. Add chicken breasts and cook about 10 minutes on each side, until juice run clear.

In a medium-size non-aluminum saucepan, combine orange juice, cranberries, honey, orange peel, cornstarch and cloves. Cook over medium heat, stirring occasionally, until thickened. Spoon sauce over chicken breasts. Serves 4.

a lot of ppl really like that cranberry/orange combo

i dont like that mix of flavors at all

Cranberry Mango Bread


INGREDIENTS

2 eggs, beaten

1 cup white sugar

1 cup mango puree

1 tablespoon orange zest

3 tablespoons canola oil

2 1/2 cups whole wheat flour

1 teaspoon salt

4 teaspoons baking powder

1 cup chopped cranberries

3/4 cup chopped walnuts


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, beat together eggs and sugar until smooth. Thoroughly blend in mango puree, orange zest, and canola oil.

In a separate medium bowl, sift together flour, salt, and baking powder. Blend into the mango mixture. Fold in cranberries and walnuts. Transfer to a medium loaf pan.

Bake 55 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Cool 10 minutes before turning out onto a wire rack.


Pumpkin Cranberry Bread


Ingredients

4 eggs

2 cups pumpkin puree

1 cup vegetable oil

4 cups sugar

4 1/2 cups all-purpose flour

2 tablespoons pumpkin pie spice

2 teaspoons baking soda

1 teaspoon salt

4 cups cranberries

Directions

Preheat oven to 350 degrees F.


In bowl combine eggs, pumpkin puree and oil. Add dry ingredients and mix well. Add cranberries and mix well. Divide dough into 2 (8 by 4-inch) loaf pans. Bake for 50 minutes.

I made this chicken cutlet (from box) last night that was really good.


It had brie cheese and cranberries and apples inside each cutlet. Nice breading on the outside. I am working on trying to find a recipe close to it to go off of.

yvw, I like cranberry muffins, and cookies too.


Heck, I like cranberries in alot of stuff.


I really like to make my own cranberry relish for the holidays. Some people don't put pineapple in theirs, but I do. I like pineapple, apples, cranberries, pecans, and orange zest in my relish. I don't measure anything lol, oh and I use splenda.
