it's football season in SE Texas, and one of the highlights for home games are smoked turkey legs

problem is ... i can't always go and most of the time i do go, someone forgets the legs


anyone have a good recipe to smoke my own turkey legs?


an idea of what i am working with ..

ive never made them

i have gotten them at the fair, and the farmers market in downtown and then at places like central market at the deli area in the hot food section.

made them on saturday ... they turned out really good

1/4 cup vegetable oil
2-3 cups apple wine (it is *almost* vinegar)
half a bottle of worchestshire sauce
salt salt salt (i forgot this one)
black pepper
sage

brine them overnight (24-48 hours would have been better)

stick them on the smoke uncovered for 2-3 hours to get a nice semi-dark smoke on them

wrap a piece of bacon around them and wrap in tin-foil

cook for another 2-3 hours ... full of awesome


temp control is the key --- 200-225 degree's
