8 large yellow squash, sliced (or zucchini - I used both - 2 zucchini and 4 yellow squash)
1 tbsp butter
1 tbsp vegetable oil
1 onion, sliced
3 cloves garlic, minced (you could use less - I just like a lot of garlic)
1 tbsp fresh thyme
salt and pepper to taste
1/2 cup sour cream
1/2 cup parmesan cheese, grated
1 cup sharp cheddar cheese, grated
1/2 sleeve Ritz crackers, crushed
Preheat oven to 350F. Grease or spray a 2 qt baking dish. In a large pan, heat the oil and butter, then add the onions, garlic, thyme and squash. Sautee until tender and season to taste (I used cayenne pepper in addition to black pepper). Place in a large bowl and add the sour cream and cheese. Mix to incorporate and add to the baking dish. Top with the crushed crackers and bake 20-25 minutes until bubbly and the topping is golden brown.
