I've been using Deltacopy (which is an rsync port to Windows) for my backups. What do you all use? I'm looking to change since I frequently have permissions issues with this tool.

I currently backup to a Windows 2008 server running CIFS and NFS services.

I dunno

I've been looking for something decent that isn't going to cost an arm and a leg.

I have a license good for three years for Backup Exec System Recovery. I'm so spoiled (yay having the sales people in your corner/on speed dial/threw them many bones over the years).

But I know that's not realistic for most people. The native Windows and Unix/Linux tools are perfectly adequate really - and free. Took me like 30 minutes to create a system disk for a friends system and schedule weekly backups to his NAS or whatever he has for his Windows 7 laptop. Bare metal restores would get dodgy but for everything else, meh.

Actually I wonder if you can mount them and extract individual files? Shouldn't be difficult. Or at least, it should be doable.
