good luck. I never liked enchiladas growing up, beause my mom always made turkey ones and they were always swimming in sauce and not good to me. My wife had a happy accident one night and cooked them too long so the sauce kind of congealed on there and now enchiladas are one of my main jams.
I hope you dig yours.
